Breakfast (of Champions) in a Hurry

Everyone knows breakfast is the most important meal of the day, but it can be challenging to try and get in a nutritious breakfast when you’re busy in the morning. Making healthy breakfast choices can be especially tough then you’re on the road, and travelling all the time. It’s all too easy to pull up to a drive-thru and order a cinnamon bun or breakfast sandwich. We’ve come up with our top 6 breakfast ideas that you can make in your room in a flash!

1.    Overnight Oats
The best part about this breakfast is that you prepare it the night before, so it’s ready in the fridge when you need it! Mix together a ½ cup of rolled oats (not instant) and ½ cup of milk. Add in a dash of sweetener like sugar or honey, or for a more decadent breakfast, swap regular milk for chocolate milk. Stick it in the fridge and you’re good to go, the oats will soften overnight, so they don’t need to be cooked! In the morning, if you’d like to fancy it up a bit, throw in a handful of blueberries or other fruit.

2.    Breakfast Banana Popsicles
This is a fun and whimsical breakfast. Take a peeled, chilled banana (put it in the fridge overnight), insert a popsicle stick, roll it in some peanut butter, or other favorite nut butter and then dip it into some granola. It’s a fun way to get in some healthy carbs and protein, and will keep you going until lunch.

3.    Breakfast Burritos
This is the perfect on-the-go breakfast. Scramble up 2 eggs (if you’re really pressed for time, you can do it in the microwave) and spread it on a whole-wheat tortilla. Add a couple of dollops of premade salsa and a sprinkle of pre-shredded low-fat cheese. Then just wrap it up like a burrito. It’s easy to eat with one hand as you’re heading out the door!

4.    Yogurt Bowls
In a bowl, add ¾ cup of plain or vanilla yogurt, and add a ½ cup of your favorite berries. (if you can’t find any in season, frozen berries will do just fine) You can stop right there and have a perfectly fine breakfast but consider taking it to the next level by mixing in a tablespoon of chia seeds. The yogurt will plump up the chia seeds giving your breakfast a unique texture and you’ll sneak in some omega-3 fatty acids.

5.    Apple Pancakes
Who doesn’t love pancakes? This version is much healthier and won’t sit heavy in your stomach if you’re off to morning meetings. Mix up a small batch of pancake batter, adding in a few dashes of cinnamon. Then take an apple, slice it horizontally into rings and dip the rings into the pancake batter. Grill the apple rings over medium heat until golden brown, and enjoy a unique take on cinnamon apple pancakes.
