It’s no secret that during the summertime, fresh, healthy meals made at home can sometimes become few and far between. For one, we’re all out and about a lot more than usual, and the idea of being stuck inside cooking isn’t all that appealing. And sometimes, it’s just too hot to have the oven or stove running anyway.

Delicious Chicken Caesar Wraps.

Shopping List:

  • Caesar salad dressing
  • Grated cheese of choice
  • Salt & pepper
  • Romaine lettuce, washed and shredded
  • Red pepper, washed and diced
  • Black olives, sliced
  • Large tortillas
  • 1 Rotisserie chicken
  • Bacon bits 

Directions:

Spread a tablespoon or two of caesar dressing evenly over the tortilla wrap. Dice cubes of white and dark meat from the rotisserie chicken and add on top of the dressing. Shake a few bacon bits on top. Add lettuce, red pepper, olives, salt, pepper, and cheese on top. Roll tortilla and place a toothpick through the center to keep it together. Enjoy!

Good-For-You 3-Bean Salad.

Shopping List:

  • 1 can red kidney beans
  • 1 can cut yellow wax beans
  • 1 can cut green beans
  • 1 green pepper, washed and chopped
  • 1 small onion, chopped
  • 3/4c sugar
  • Salt
  • ⅓ c oil
  • ⅔ c vinegar (rice or wine)

Directions:

Drain and rinse all beans, and then place in a mixing bowl with onion and peppers. Gently toss. Combine the remaining ingredients in a small bowl, mixing well. Pour the dressing over the bean mixture, stirring to coat evenly. For optimal flavor, let the salad marinate in the fridge for a few hours before serving.

Quick & Easy Tacos.

Shopping List:

  • Salsa
  • Sour cream
  • Small tortillas or tacos shells
  • Cheddar cheese
  • Onion, diced
  • Any color pepper, washed and diced
  • Avocado, diced
  • Lettuce, washed and shredded
  • 1 can black beans, rinsed
  • 1 can corn

Directions:

Assemble tacos by creating layers on the flat tortilla or in the taco shell. Begin with black beans as the base, and then add corn, peppers, onion, lettuce, avocado, cheese, sour cream, and salsa. Enjoy!

Tasty Greek Chopped Salad.

Shopping List:

  • 1 cucumber, washed and diced
  • 4 roma tomatoes, washed and diced
  • 1 red pepper, washed and diced
  • 1 red onion, diced
  • 1 can chickpeas, rinsed
  • Feta cheese
  • Olives, sliced
  • 3 tbsp red wine vinegar
  • ¼ c oil
  • 2 tsp dried oregano
  • Salt & pepper

Directions:

In a small bowl, whisk together the last 4 ingredients to form the dressing. Set aside. In a large bowl, toss the vegetables and chickpeas together. Add dressing, tossing to coat evenly. Crumble feta cheese on top. Serve chilled. Enjoy!
