Huevos Rancheros
Start the 5th of May off right with this Mexican breakfast staple. Fry up some tortillas until crispy and top with canned beans (black or refried work well), salsa, fried eggs, and fresh avocado. This super side dish will go a long way at any Cinco de Mayo party you attend. Ready in just 30 minutes, this dish can be made with either white or brown rice and comes together quickly on the stovetop with an affordable mix of fresh garlic and frozen veggies. Boneless pork shoulder and a few simple ingredients combine to create a dish that won’t dent your savings account. Skip the taco shells and get to the good stuff with this cheesy taco concoction that’s easy to prepare on a stovetop. Ground beef and all the usual suspects combine to create a hearty, melty masterpiece that might leave you needing a siesta after digging in.
