There are a few things Easter signifies that we all love: the onset of spring and warmer weather, a season of rebirth and renewal, and of course, time with family and friends. No matter where you find yourself this year—on the road, at home, or somewhere in between—there are plenty of ways to celebrate. Read on for a few simple yet meaningful ways to enjoy the holiday.
Eggs have long been part of many Easter traditions, and we’re not just talking about the chocolate ones! This year, embrace the tradition and try:
For many of us, Easter just wouldn’t be Easter without at least one chocolatey treat! There are plenty of great (and simple) recipes out there, but we’ve found one that we especially like, and it requires few ingredients and little prep!
Homemade Chocolate Peanut Butter Eggs
At the grocery store, pick up:
Directions
Line a cookie sheet with parchment paper; set aside. In a medium saucepan, combine peanut butter, butter, vanilla, and 1c powdered sugar over medium heat until completely melted and starting to bubble. Stir constantly. Remove from heat.
Add the remaining sugar in small increments, stirring after each new addition. Set aside and let cool. Chill dough in the fridge before rolling into eggs. Using your hands, shape dough into flat ovals. Place the eggs on lined baking sheet, and then put them in the freezer for about an hour until hardened.
Melt the chocolate in the microwave by heating for about 30 seconds and then stirring, repeating the process until smooth. Using 2 forks, roll each egg into the chocolate and return them to the baking sheet. Once all eggs are coated, return the baking sheet to the freezer for another hour or 2 until completely set. Store in the freezer until ready to eat. Enjoy!
