No-fuss Easter Brunch In Your InTown Suite

Easter is a great time of year, signifying renewal, rebirth, and the onset of spring and warmer weather. If you find yourself away from home this year, worry not – there are plenty of ways to celebrate and the staff at InTown Suites have a few ideas on how to do just that.

To kick off the weekend, start with this no-fuss Easter brunch in your InTown Suite. Then take a look at these ideas for celebrating Easter at your home away from home.

1) Hearty omelets.

Omelets are the perfect brunch item not only because they’re delicious (of course), but also because they’re easily customizable to please all palates. Simply throw in your favorite veggies, and voila! Start with a classic like spinach and feta as your base.


  • Eggs
  • ¼ c. milk
  • 2 tbsp. oil
  • Seasonings of preference (salt & pepper, cayenne, cilantro, etc.)
  • 1 c. spinach
  • ¼ c. chopped onion
  • ¼ c. chopped green bell pepper
  • ¼ c.chopped red bell pepper
  • Feta cheese

To prepare:

  • Heat oil in skillet on medium heat.
  • In a bowl, whisk together eggs, milk, and seasonings.
  • In another bowl, combine all chopped veggies and desired amount of feta cheese.
  • Pour roughly ⅓ c. of the egg mixture into the skillet, swirling until the bottom of the pan is covered.
  • Heat eggs until they are mostly cooked.
  • Add roughly ¼ c. of the veggie mixture onto one half of the egg.
  • Fold over half of the omelet, cooking for another minute or 2.
  • Remove from pan, and serve with any additional garnishes, seasonings, or toppings you’d like!

2) Fresh fruit salad.

Healthy and so versatile, you can whip up a fruit salad to accompany Easter brunch in just a few minutes.

At the grocery store, pick up:

  • 3 tbsp. brown sugar
  • 2 tbsp. lime juice
  • Fruit – pre-chopped or whole, including apples, grapes, plums, blueberries, strawberries, cantaloupe, and whatever else you like.

To prepare:

  • Stir brown sugar and lime juice together in a bowl. Let stand for about 10 minutes, until sugar is completely dissolved.
  • Chop fruit if required.
  • Add fruit to lime juice mixture, tossing to coat.

Pair your fresh fruit salad and your delicious omelets with some coffee and orange juice to drink, as well as this delicious easter treat!

3) No-bake chocolate haystacks.

At the store, pick up:

  • 2 c. sugar
  • ½ c. milk
  • ½ c. butter
  • ½ c. cocoa
  • Salt
  • ½ tsp. vanilla
  • 3 c. rolled oats
  • 1 c. flaked coconut
  • Wax paper
  • Bag of mini eggs, mini marshmallows, jelly beans, or any topper you’d like!

To prepare:

  • In a saucepan, combine sugar, milk, butter, cocoa, and a dash of salt.
  • Bring to a boil, and cook for 5 minutes, stirring constantly.
  • Remove pan from heat, and mix in vanilla, oats, and coconut.
  • Drop by spoonful onto a tray lined with wax paper.
  • Press down with spoon or thumb to form a little well in the center of each haystack.
  • Drop topper in (mini eggs, marshmallows, etc).
  • Let cool.
