One Pot Meals Ready in Less than 30 Minutes – Part II

You’ve been asking for more one-pot meals that are easy and fast to make in your InTown Suites kitchen, so we’ve written another blog post giving away some of our favorite recipes. These meals are delicious and will leave you with money in your pocket, compared to eating at restaurants all the time.  These recipes are made for one, but can easily be doubled to serve two.

Fancy Friend Ramen
Everyone makes fun of college-students for living off of ramen, but if you use it as a base, it can actually be the start of an easy and tasty lunch or dinner. This recipe includes some protein and vegetables for added nutrition.

Ingredients:
Olive oil
1 clove of garlic, minced
1 package of ramen instant noodles
1 zucchini, grated
1 large carrot, grated
½ bag of baby spinach
1 egg
Soy Sauce
Sriracha
1 green onion, sliced

Directions:
1. In a medium pot, over medium heat, sauté the garlic in a little olive oil.
2. Once you can smell the garlic, add 3 cups of water to the pot and bring boil over medium heat.
3. Once the water is boiling, add the ramen noodles and half the ramen soup base to the pot.
4. As soon as the noodles start to soften, add the grated carrot, zucchini and half bag of baby spinach.
5. After another minute, turn the heat down to a simmer and using a spoon or ladle, make a well in the pot.
6. Crack an egg into the well and gently let it simmer until cooked.
7. Once the egg is cooked, add a splash of soy sauce and sriracha until it’s spicy enough to your liking.
8. Empty the contents of the pot into a bowl and garnish with the green onion.
9. Eat and enjoy!

Peasant Potato Soup
This soup make seem like it’s too simple to be good, but it’s delicious comfort food that’s perfect for a cozy winter’s night, snuggled up watching television.

Ingredients:
Olive oil
1 garlic clove, minced
2 cups chicken or vegetable broth
2 large potatoes, either baking or waxy* (see note)
½ cup of half and half
Salt
Pepper
1 green onion, thinly sliced

Directions:
1. In a pot over medium heat, sauté the garlic and olive oil.
2. Once the garlic beings to smell, add the broth and bring to a boil.
3. While waiting for the broth to come to a boil, peel the potatoes and dice into small chunks.
4. Once the broth is boiling, add the potatoes, cooking until the reach your desired consistency, about 15-20 minutes.
5. Lower the heat to a simmer and add the half and half.
6. Season the soup with salt and pepper to taste.
7. Empty the contents of the pot into a bowl and garnish with the green onion.
8. Eat and enjoy!

Note* Baking potatoes will break down easier and release more starch into the soup, while waxy potatoes are firmer and hold their shape better. Use whichever variety you prefer, or use one of each.
