Simple Meal Ideas: Cooking at Your InTown Suite

Craving some home-cooked goodness?

Take out and dining out are delicious – and often, very convenient – meal options to have at our fingertips. But there’s something to be said for a meal that’s been assembled at your own place, by yourself or a loved one.

The meals are often healthier, and there’s just something to them that seems so satisfying compared to the typical ‘grab and go’ types of food.

Delicious One-Pot Pasta

One-pot meals are the best – with little mess to clean up, they leave your evening free to spend however you please.

A great option when you’re cooking for the family, this one-pot pasta will typically yield about 6 servings. Adjust ingredient amounts to make less, or, enjoy leftovers for the days to come! 

Ingredients

Head to the grocery store and pick up:

  • 1 lb spaghetti
  • 1 package cooked sausage, thinly sliced
  • 1 large onion, thinly sliced
  • 3 c halved grape tomatoes
  • 2 c fresh basil leaves
  • 4 cloves garlic, thinly sliced
  • Salt & pepper to taste
  • 1 c grated parmesan

Cooking Instructions
Over medium-high heat, combine spaghetti, sausage, onion, tomatoes, basil, garlic and 4.5 c water in a large stock pot. 

Season with salt & pepper.

Bring to a boil. Once boiling, reduce heat and simmer, uncovered, until pasta is cooked through and the liquid has reduced (this will take roughly 10 minutes).

Add desired amount of parmesan to pot; stir and combine.

Serve & enjoy! Refrigerate leftovers once cool.

One-Pot Chicken & Veggies

There’s nothing better, or more comforting, than familiar culinary classics. For many of us, it doesn’t get more classic or comforting than your typical ‘meat and potatoes.’ 

Prepare this simple dish in your InTown Suite with ease – this one-pot chicken and vegetable dish is quick and hassle-free!

Ingredients

At the grocery store, pick up:

  • 2 tbsps olive oil
  • 2 boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, finely chopped
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 bag (19 oz) frozen roasted potatoes with garlic & herb sauce
  • 2 boxes (7 oz each) frozen blend broccoli, carrots and sweet peppers*

*Substitute with fresh alternatives, if desired.

Cooking Instructions 

In a 10 or 11 inch skillet, begin to heat 1 tbsp of olive oil on low heat.

Add chicken and cook, turning occasionally, until browned on all sides. Remove from skillet.

Add remaining tbsp of oil to skillet. Cook the onion over low heat until it becomes soft and golden brown.

Add tomatoes to the skillet, cooking for another 2 – 3 minutes. Stir in the potatoes and vegetable blend.

Cover the skillet with a lid or foil, cooking for about 5 more minutes, stirring once. 

Return the chicken to the skillet. Add salt & pepper, if desired. Cover and cook for another 8 – 10 minutes longer, stirring occasionally.

 Serve & enjoy! Refrigerate leftovers once cool.
